Pleurotus ostreatus, a frequent guest on home dining tables, is deeply loved for its delicious taste and rich nutrition. However, such delicate ingredients often start to soften and release water shortly after purchase, which troubles many housewives. In fact, as long as the scientific preservation methods are mastered, the freshness period of oyster mushrooms can be extended to a week or even longer. This article will systematically introduce the complete set of preservation techniques from selection to storage, helping you lock in the freshness of button mushrooms.
I. Basic Preservation: Start from Selection

The first secret to freshness preservation begins in the market selection stage. High-quality Pleurotus ostreatus has intact caps that are light gray in color, with a diameter of 3 to 5 centimeters being ideal. Such Pleurotus ostreatus is of moderate maturity. The gills of the mushrooms should be white, tight and neatly arranged. The best choice is one with a thick, short and sturdy stem that does not exceed 2 centimeters in length. Pay special attention to checking the edge of the cap. The edge of fresh button mushrooms is slightly curled inward. If it is found to be completely unfurled or upturned, it indicates that they have begun to age.

When purchasing, be cautious of three issues with Pleurotus ostreatus: Those with an increase in surface mucus have begun to spoil. The quality of the button mushrooms that give off a sour and stinky smell has irreversibly declined. The appearance of yellow spots on the cap indicates microbial contamination. It is recommended to choose packaging products with ventilation holes. This kind of packaging can effectively reduce mechanical damage during transportation and lay a foundation for subsequent preservation.
Ii. Pretreatment: A key step in preservation

A common mistake made by many consumers is to put button mushrooms directly into the refrigerator. In fact, proper pretreatment can make the preservation effect twice as effective with half the effort. First, gently wipe the surface impurities with a soft-bristled brush or a clean damp cloth. Remember not to wash it with water! The water absorption rate of Pleurotus ostreatus is as high as 90%, and water will accelerate the reproduction of putrefacting fungi. For cases where cleaning is necessary, it is recommended to use the "steam bath" method: place the button mushrooms in a strainer and quickly steam them over boiling steam for 5 to 8 seconds. This can not only kill bacteria but also prevent water absorption.

The processed button mushrooms need to undergo "breathing adjustment". Spread it flat on a bamboo sieve and place it in a cool and well-ventilated area for 1 to 2 hours to allow the surface moisture to evaporate and at the same time expel some of the carbon dioxide produced by metabolism. This step can effectively reduce the humidity inside the package and prevent condensation from occurring.
Iii. Refrigeration Preservation: Precise control of temperature and humidity

Refrigeration in the refrigerator is the most commonly used preservation method, but the humidity in a regular refrigerator compartment is insufficient (about 30-40%), which will accelerate the loss of moisture in oyster mushrooms. The improvement method is as follows: Place a slightly damp kitchen paper at the bottom of the preservation box (the humidity should be such that no water comes out when squeezed), put in the button mushrooms, then cover with another layer of dry kitchen paper, and finally use a toothpick to poke 5 to 6 ventilation holes on the box lid. This "sandwich" structure can maintain the humidity within the ideal range of 85-90%, and can be preserved for 5-7 days at 2-4℃.

The advanced version can adopt "vacuum refrigeration" : Put the pre-treated button mushrooms and a few slices of fresh rosemary into vacuum bags and evacuate to a vacuum degree of -0.08MPa. The antioxidant components in rosemary can inhibit the activity of polyphenol oxidase in Pleurotus ostreatus, while a vacuum environment prevents the reproduction of aerobic bacteria. This method can extend the shelf life to 10 days with minimal flavor loss.
Iv. Freezing Preservation: Long-term Preservation solution

For situations where storage needs to exceed a week, freezing is the best choice. However, direct freezing will result in a soft and mushy texture after thawing. The correct approach is to carry out "low-temperature pretreatment" : rapidly freeze the button mushrooms at -40℃ for 2 hours to form tiny ice crystals within the cells and reduce damage to the cell walls. After processing, transfer to -18℃ for conventional freezing and it can be stored for 3 months.

No need to defrost before use. Just cook directly. It is worth noting that frozen button mushrooms are most suitable for making soup or stews, as they release a lot of water when stir-fried. It is recommended to blanch it in 1% salt water for 10 seconds in advance, which can better maintain its shape. Experimental data show that after proper freezing treatment, the retention rate of vitamin B2 in Pleurotus ostreatus can reach over 85% after thawing.
V. The Integration of Traditional Wisdom and Modern Technology

The "rice husk preservation method" that is popular among the people has been scientifically verified to be effective: burying oyster mushrooms in dry rice husks, which not only absorb moisture but also contain silicon dioxide with antibacterial properties. The modern improved version can use food-grade silica gel desiccants instead of rice husks to create an environment close to oxygen-free in sealed containers.

The latest research has found that Pulsed Light treatment can effectively kill the spoilage bacteria on the surface of Pleurotus ostreatus without affecting its quality. Under household conditions, a 30-second ultraviolet disinfection cabinet can be used for treatment, which can reduce the number of surface colonies by two logarithmic levels. Combined with modified atmosphere packaging (filled with 5% oxygen and 10% carbon dioxide), it can achieve an ultra-long preservation period of 15 days under refrigeration conditions.
Vi. Evaluation of Preservation Effect and Food Safety

To determine whether a Pleurotus ostreatus has gone bad, one cannot rely solely on its appearance. It should be discarded immediately when the following conditions occur: the gills turn from white to red (due to contamination by Bacillus thuringiensis). It leaves a distinct indentation after touch and does not rebound (the cell has died). Abnormal foam (protein decomposition products) is produced during cooking. Even if there are no obvious signs of deterioration, button mushrooms that have been stored beyond the recommended period should be thoroughly heated to a core temperature of 90℃ and maintained for more than 3 minutes.

It should be particularly noted that during the preservation process of oyster mushrooms, trace amounts of formaldehyde (a natural metabolic product) are produced, with the content usually ranging from 1 to 3mg/kg, which is far below the food safety standard (≤10mg/kg). Blanching can remove about 70% of formaldehyde. Therefore, it is recommended to pre-blanch the button mushrooms that have been stored for more than 3 days.

After mastering these preservation techniques, you no longer need to worry about the short-term spoilage of button mushrooms. From market selection to the final processing before cooking, meticulous control at every stage can extend the shelf life of this delicious mushroom. Remember, the best way to preserve freshness is actually to purchase in moderation. After all, no matter how good the preservation method is, it can never compare to freshly made oyster mushroom dishes. It is recommended that families consume the purchased quantity within 3 to 5 days, which not only ensures the taste but also prevents nutrient loss.
